Description
A delightful breakfast twist on pizza, combining crispy cheese, eggs, zesty tomato sauce, and salami.
Ingredients
- 3 eggs
- 60g (approx. 2 oz) reduced-fat cheese, grated
- 1 tbsp passata (about 15g)
- A few slices of salami (approx. 20g)
- Mixed herbs, to top
Instructions
- In a non-stick frying pan over medium heat, sprinkle half the grated cheese evenly across the pan. Allow it to melt and become slightly crispy.
- Crack and whisk the eggs in a bowl until smooth.
- Pour the whisked eggs over the melted cheese. Cover the pan with a lid and cook until the bottom is firm and golden.
- Carefully flip the egg-cheese creation using a spatula.
- Spread the passata on top, add salami slices, and sprinkle the remaining cheese. Cover until cheese is melted.
- Remove from the pan, sprinkle with mixed herbs, and enjoy immediately.
Notes
Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 2 months.
