Description

A delightful breakfast twist on pizza, combining crispy cheese, eggs, zesty tomato sauce, and salami.


Ingredients

  • 3 eggs
  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top


Instructions

  1. In a non-stick frying pan over medium heat, sprinkle half the grated cheese evenly across the pan. Allow it to melt and become slightly crispy.
  2. Crack and whisk the eggs in a bowl until smooth.
  3. Pour the whisked eggs over the melted cheese. Cover the pan with a lid and cook until the bottom is firm and golden.
  4. Carefully flip the egg-cheese creation using a spatula.
  5. Spread the passata on top, add salami slices, and sprinkle the remaining cheese. Cover until cheese is melted.
  6. Remove from the pan, sprinkle with mixed herbs, and enjoy immediately.

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 2 months.
