Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup milk
- 1 cup chopped fresh cherries
- 1/2 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, being careful not to overmix.
- Fold in the chopped cherries and pistachios.
- Add the milk and mix until smooth.
- Grease a loaf pan and pour in the batter, spreading it evenly.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
Notes
Use fresh cherries and high-quality pistachios for the best flavor. Don’t overmix the batter to avoid a dense loaf.
