Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup chopped fresh cherries
  • 1/2 cup chopped pistachios


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, being careful not to overmix.
  6. Fold in the chopped cherries and pistachios.
  7. Add the milk and mix until smooth.
  8. Grease a loaf pan and pour in the batter, spreading it evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
