Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and garlic and sauté until translucent.
  2. Add the diced chicken and cook until browned and cooked through, stirring often.
  3. Stir in the bell pepper and pineapple chunks, cooking for an additional 2 to 3 minutes.
  4. Mix in the cooked rice and soy sauce, stirring until combined and heated through.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh cilantro before serving.

Notes
