Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 4 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Pink food coloring
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh strawberries, pureed
  • 1 cup powdered sugar for filling


Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a bowl, combine almond flour and powdered sugar. Sift together to ensure there are no clumps.
  3. In a clean bowl, whip egg whites and cream of tartar until foamy. Gradually add granulated sugar while continuing to whip until stiff peaks form.
  4. Gently fold the almond flour mixture into the meringue in three additions, then add vanilla extract and pink food coloring until desired shade is reached.
  5. Transfer the batter to a piping bag and pipe 1.5-inch circles onto the prepared baking sheets.
  6. Tap the baking sheets on the counter to release air bubbles and let the macarons sit for 30-60 minutes to form a skin.
  7. Bake in the preheated oven for 15-20 minutes. Let them cool completely.
  8. For the filling, beat the softened butter until creamy, then mix in strawberry puree and powdered sugar until smooth.
  9. Pair the macaron shells, pipe filling onto one shell, and top with another.
  10. Store in an airtight container and enjoy!
