Description

Delicious and healthy homemade peanut butter granola bars, perfect for breakfast or a snack.


Ingredients

  • 3 cups old-fashioned rolled oats (use verified gluten-free, if needed)
  • 3/4 cup natural peanut butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • 2 whole eggs (use flax egg for vegan-friendly)
  • Optional add-ins: pinch of salt, walnuts, pecans, almonds, chia, sunflower or pumpkin seeds, dried fruit


Instructions

  1. Preheat your oven to 350℉.
  2. In a large bowl, combine all the ingredients and mix well. If your peanut butter is too solid, heat it for 10-15 seconds to make it easier to mix.
  3. Line a 9×9 inch baking dish or pan with parchment paper.
  4. Transfer the mixture to your prepared dish or pan. Press the mixture down firmly and evenly.
  5. If you’re using chocolate chips, sprinkle them on top and press them down into the mixture.
  6. Bake for 15-17 minutes or until the center is baked through and the edges start to brown. Check them after 14 minutes.
  7. Once baked, cool the pan on a cooling rack.
  8. Let the bars cool completely before cutting them into 16 squares with a sharp knife.

Notes

Press the mixture firmly for better bar cohesion. Customize add-ins to fit your preferences.
