Delicious and fun Peanut Butter and Jelly Cookies, combining classic flavors in a crunchy and soft treat.
Ingredients
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Strawberry jam (for filling)
- Additional jelly (for topping)
- Chopped peanuts (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt; mix until smooth.
- Roll the dough into balls and then roll them in granulated sugar.
- Place the balls on a baking sheet lined with parchment paper.
- Make an indentation in the center of each cookie and fill it with a small amount of strawberry jam.
- Bake for 10-12 minutes until slightly golden.
- After baking, top each cookie with a dollop of jelly, a drizzle of peanut butter, and sprinkle with chopped peanuts.
- Allow to cool before serving.
Notes
Store cookies in an airtight container at room temperature for about a week or freeze for longer storage.
