Ingredients

  • 250g pasta (choose your fave)
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, sliced
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh basil, for garnish


Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Prepare a baking sheet with parchment paper.
  3. In a bowl, combine the zucchini, bell pepper, red onion, and cherry tomatoes.
  4. Drizzle olive oil over the veggies, sprinkle with salt and pepper, and toss to coat.
  5. Spread the veggies on the baking sheet.
  6. Roast in the oven for 20-25 minutes until tender.
  7. Meanwhile, cook the pasta according to package instructions in salted water.
  8. Drain the pasta and combine it with the roasted veggies.
  9. Toss well and serve with fresh basil on top.
