Ingredients

  • 2 cups cooked rotini or farfalle pasta (al dente or slightly past)
  • 1 cup cherry tomatoes, halved
  • ½ cup diced cucumber
  • ½ cup bell peppers (any color), chopped
  • ¼ cup Kalamata olives, sliced
  • ½ cup feta cheese or mini mozzarella balls
  • ¼ cup fresh parsley or basil, chopped
  • ½ cup vinaigrette or preferred dressing
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Rinse under cold water and drain well.
  2. Prepare all vegetables and toppings by chopping them into small, even pieces.
