These layered pasta salad cups are perfect for parties, picnics, or meal prep. Filled with fresh veggies, pasta, cheese, and dressing, they’re easy to assemble, serve, and enjoy!
Ingredients
- 2 cups cooked rotini or farfalle pasta (al dente or slightly past)
- 1 cup cherry tomatoes, halved
- ½ cup diced cucumber
- ½ cup bell peppers (any color), chopped
- ¼ cup Kalamata olives, sliced
- ½ cup feta cheese or mini mozzarella balls
- ¼ cup fresh parsley or basil, chopped
- ½ cup vinaigrette or preferred dressing
- Salt and black pepper to taste

Instructions
- Cook the pasta according to package instructions. Rinse under cold water and drain well.
- Prepare all vegetables and toppings by chopping them into small, even pieces.
- Layer your salad cups: Add 1–2 teaspoons of dressing to the bottom of each individual cup.
- Spoon in a layer of pasta, followed by firm veggies like bell peppers, cucumbers, and olives.
- Top with tomatoes, cheese, and fresh herbs.
- Chill the cups for at least 30 minutes before serving to allow flavors to meld.
- Garnish with additional herbs and a small drizzle of dressing before serving.
- Serve cold with small forks or spoons.
