Ingredients

  • 250g ground beef
  • 250g ground pork
  • 1 medium onion, finely chopped
  • 1 medium carrot, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 400g canned plum tomatoes
  • 2 tbsp tomato paste
  • 150ml dry red wine
  • 100ml milk or cream
  • 1 tsp dried or fresh basil
  • 1 tsp dried or fresh oregano
  • 2 bay leaves
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for sautéing
  • 400g pasta (tagliatelle, pappardelle, or spaghetti)
  • Freshly grated Parmesan cheese, to serve


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; sauté until soft and golden. Add garlic; cook for another minute.
  2. Add ground beef and pork; cook until browned. Pour in red wine; simmer until slightly reduced.
  3. Add canned tomatoes and tomato paste; stir well. Add bay leaves, basil, oregano, salt, and pepper; bring to simmer.
  4. Stir in milk or cream; reduce heat to low. Simmer for at least an hour, stirring occasionally.
  5. Cook pasta according to package instructions until al dente. Drain and return to pot.
  6. Remove bay leaves from sauce; adjust seasoning. Ladle sauce over pasta; toss gently to coat.
  7. Transfer to bowls; garnish with Parmesan. Serve immediately with bread and wine.
