Description
A cozy bowl of Parmesan Tortellini Soup that’s simple to make and bursting with flavor.
Ingredients
- 2 cups tortellini (any kind)
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, sauté onion and garlic until translucent, about 3-5 minutes.
- Add diced tomatoes and Italian seasoning; cook for about 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add tortellini and cook according to package instructions, usually 7-10 minutes.
- Stir in spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper to taste. Ladle into bowls and top with Parmesan cheese.
Notes
For a spicier soup, add red pepper flakes while cooking.
