Description

A cozy bowl of Parmesan Tortellini Soup that’s simple to make and bursting with flavor.


Ingredients

  • 2 cups tortellini (any kind)
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese


Instructions

  1. In a large pot, sauté onion and garlic until translucent, about 3-5 minutes.
  2. Add diced tomatoes and Italian seasoning; cook for about 2 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add tortellini and cook according to package instructions, usually 7-10 minutes.
  5. Stir in spinach and cook until wilted, about 2 minutes.
  6. Season with salt and pepper to taste. Ladle into bowls and top with Parmesan cheese.

Notes

For a spicier soup, add red pepper flakes while cooking.
