A fun twist on traditional pancakes, this Pancake Casserole combines all the delicious flavors into one dish, perfect for breakfast or brunch.
Ingredients
- 2 cups pancake mix
- 1 1/2 cups milk
- 2 large eggs
- 2 cups mixed berries (fresh or frozen)
- 1 cup Greek yogurt
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Powdered sugar for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, mix the pancake mix, milk, eggs, maple syrup, vanilla extract, and baking powder until well combined.
- Pour half of the batter into the prepared baking dish.
- Sprinkle the mixed berries evenly over the batter.
- Pour the remaining batter over the berries.
- Bake for about 25-30 minutes, or until golden brown and set.
- Let it cool slightly before serving.
- Serve with Greek yogurt on top and a sprinkle of powdered sugar if desired.
Notes
Make sure to grease the baking dish well to prevent sticking. Customize with different berries or add nuts and spices.
