Description

A fun twist on traditional pancakes, this Pancake Casserole combines all the delicious flavors into one dish, perfect for breakfast or brunch.


Ingredients

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 large eggs
  • 2 cups mixed berries (fresh or frozen)
  • 1 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Powdered sugar for serving (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix the pancake mix, milk, eggs, maple syrup, vanilla extract, and baking powder until well combined.
  3. Pour half of the batter into the prepared baking dish.
  4. Sprinkle the mixed berries evenly over the batter.
  5. Pour the remaining batter over the berries.
  6. Bake for about 25-30 minutes, or until golden brown and set.
  7. Let it cool slightly before serving.
  8. Serve with Greek yogurt on top and a sprinkle of powdered sugar if desired.

Notes

Make sure to grease the baking dish well to prevent sticking. Customize with different berries or add nuts and spices.
