- 2 tablespoons avocado or canola oil
- ¾ teaspoon kosher salt
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with foil.
- Spread the okra out in a single layer on the baking sheet.
- Drizzle with oil and sprinkle evenly with salt, garlic powder, and pepper.
- Toss everything together directly on the sheet until the okra is well-coated.
- Roast for 12–14 minutes, or until the okra is fork-tender and lightly charred on the edges.
- Let cool slightly and serve warm.
Notes
Ensure okra is completely dry before roasting for best texture. Great as a healthy side for grilled meats or vegetarian mains.
