Description

Delightful, easy side dish of oven-roasted green beans with crispy garlic and savory parmesan.


Ingredients

  • 1 pound green beans, trimmed
  • 2 Tbsp olive oil
  • 2 large cloves garlic, minced
  • Salt + pepper, to taste
  • 1/2 cup parmesan, freshly grated
  • 1/2 a lemon, juice
  • 1-2 Tbsp fresh parsley, chopped (to garnish)


Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
  2. Place the trimmed green beans on the baking sheet. Toss them in olive oil, minced garlic, salt, and pepper, spreading them out in an even layer.
  3. Sprinkle the grated parmesan over the green beans, ensuring they are evenly covered.
  4. Transfer the baking sheet to the oven and roast the beans for about 20 minutes, or until lightly browned and the cheese is melted and crispy.
  5. Remove the green beans from the oven and top with freshly squeezed lemon juice and chopped parsley. Season with extra salt and pepper if needed. Serve hot!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or skillet to maintain crispiness.
