Ingredients
- 4 large russet potatoes, peeled and diced
- 1 cup chopped onion
- 1 cup shredded cheddar cheese
- 1/2 cup cream
- 4 cups chicken broth
- 1/2 cup cooked and crumbled bacon
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chives for garnish
Instructions
- In a large pot, combine the diced potatoes, onion, and chicken broth. Bring to a boil and cook until the potatoes are tender.
- Use a potato masher to mash some of the potatoes for a thicker texture.
- Stir in the cream, shredded cheddar cheese, bacon, garlic powder, salt, and pepper. Simmer for another 5-10 minutes, stirring frequently.
- Serve hot, garnished with chives and additional cheddar cheese if desired.
Notes
For best quality, freeze in airtight containers for up to 2 months. Add chicken broth or cream when reheating to restore creaminess.
