Description

A creamy potato soup packed with flavor, topped with crispy bacon and cheddar cheese, perfect for chilly evenings.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream
  • 4 cups chicken broth
  • 1/2 cup cooked and crumbled bacon
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chives for garnish


Instructions

  1. In a large pot, combine the diced potatoes, onion, and chicken broth. Bring to a boil and cook until the potatoes are tender.
  2. Use a potato masher to mash some of the potatoes for a thicker texture.
  3. Stir in the cream, shredded cheddar cheese, bacon, garlic powder, salt, and pepper. Simmer for another 5-10 minutes, stirring frequently.
  4. Serve hot, garnished with chives and additional cheddar cheese if desired.

Notes

For best quality, freeze in airtight containers for up to 2 months. Add chicken broth or cream when reheating to restore creaminess.
