Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups pasta (any shape)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro for garnish


Instructions

  1. Sauté onions and garlic in a large pot on medium heat until soft and fragrant.
  2. Add the chicken breasts and cook until browned.
  3. Stir in green chilies, beans, corn, and spices, mixing well.
  4. Pour in chicken broth and bring to a boil.
  5. Add pasta and cook until al dente.
  6. Shred the chicken in the pot and mix well.
  7. Top with cheese and let melt, then garnish with cilantro before serving.

Notes

Make sure to rinse the beans well and avoid overcooking the pasta. Feel free to substitute the chicken with rotisserie chicken or use different types of beans and pasta shapes.
