Ingredients
- 1 pound ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups spinach or kale, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground meat over medium heat. Drain any excess fat.
- Add the diced onion and garlic, sautéing until softened and fragrant.
- Stir in the crushed tomatoes, broth, and broken lasagna noodles.
- Season with Italian seasoning, salt, and pepper to taste.
- Bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the noodles are cooked through.
- Add the chopped spinach or kale and stir until wilted.
- Serve hot, topped with dollops of ricotta, shredded mozzarella, and fresh basil.
Notes
For a creamier texture, stir in a splash of heavy cream just before serving. Substitute with turkey or plant-based alternatives if desired.
