  • 1 pound ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish


Instructions

  1. In a large pot, brown the ground meat over medium heat. Drain any excess fat.
  2. Add the diced onion and garlic, sautéing until softened and fragrant.
  3. Stir in the crushed tomatoes, broth, and broken lasagna noodles.
  4. Season with Italian seasoning, salt, and pepper to taste.
  5. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the noodles are cooked through.
  6. Add the chopped spinach or kale and stir until wilted.
