Ingredients
- 1 lb chicken, diced
- 1 lb sausage, sliced
- 1 cup shrimp, peeled
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 cups rice
- 2 tsp Cajun seasoning
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, bell pepper, and garlic over medium heat until soft.
- Add the diced chicken and sliced sausage, cooking until browned while stirring occasionally.
- Stir in the rice and Cajun seasoning, letting the aroma fill the kitchen.
- Add chicken broth and diced tomatoes to the pot, stirring well, then bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes.
- Stir in the shrimp and cook for an additional 5-10 minutes until the shrimp is pink and cooked through.
- Season to taste with salt and pepper before serving.
