Description
A delightful one-pot meal combining tender chicken, fluffy basmati rice, and a medley of spices for a quick and satisfying dinner.
Ingredients
- 1½ cups uncooked basmati rice
- 6 chicken thighs
- 1 ½ tsp mixed herbs (or Italian seasoning)
- 2 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 Tbsp olive oil
- 1 cup onion, chopped
- 1 Tbsp butter
- 3 cups low sodium chicken stock
- Salt and pepper to taste
- ½ cup green onions, to garnish
Instructions
- In a small mixing bowl, combine the smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper. Set aside.
- Rinse the rice under cold water until the water runs clear. Set it aside.
- Coat the chicken thighs with the spice mix in a larger bowl, reserving about a teaspoon for later.
- Heat olive oil in a pot over medium-high heat. Add the chicken, skin side down, and sear for about 3 minutes on each side until golden brown, then remove and set aside.
- Sauté chopped onions in the same pot until soft, then add butter and stir until melted.
- Add rinsed rice and toast for about a minute, ensuring it doesn’t stick.
- Pour the chicken stock over the rice, add the reserved seasoning, and stir to combine. Scrape the bottom of the pot to deglaze.
- Taste and adjust seasoning if needed.
- Place the chicken over the rice, cover, and cook on low-medium heat for 15 to 20 minutes.
- Once rice is tender, fluff with a fork, garnish with green onions, and let it stand for another 3 minutes before serving.
Notes
Rinse rice well to achieve fluffy grains. Customize with vegetables and adjust spices as desired.
