One Pot Chicken and Rice

Description

A delightful one-pot meal combining tender chicken, fluffy basmati rice, and a medley of spices for a quick and satisfying dinner.


Ingredients

  • 1½ cups uncooked basmati rice
  • 6 chicken thighs
  • 1 ½ tsp mixed herbs (or Italian seasoning)
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp olive oil
  • 1 cup onion, chopped
  • 1 Tbsp butter
  • 3 cups low sodium chicken stock
  • Salt and pepper to taste
  • ½ cup green onions, to garnish


Instructions

  1. In a small mixing bowl, combine the smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper. Set aside.
  2. Rinse the rice under cold water until the water runs clear. Set it aside.
  3. Coat the chicken thighs with the spice mix in a larger bowl, reserving about a teaspoon for later.
  4. Heat olive oil in a pot over medium-high heat. Add the chicken, skin side down, and sear for about 3 minutes on each side until golden brown, then remove and set aside.
  5. Sauté chopped onions in the same pot until soft, then add butter and stir until melted.
  6. Add rinsed rice and toast for about a minute, ensuring it doesn’t stick.
  7. Pour the chicken stock over the rice, add the reserved seasoning, and stir to combine. Scrape the bottom of the pot to deglaze.
  8. Taste and adjust seasoning if needed.
  9. Place the chicken over the rice, cover, and cook on low-medium heat for 15 to 20 minutes.
  10. Once rice is tender, fluff with a fork, garnish with green onions, and let it stand for another 3 minutes before serving.

Notes

Rinse rice well to achieve fluffy grains. Customize with vegetables and adjust spices as desired.
