Ingredients

  • 2 cups long-grain rice
  • 4 chicken thighs (or breasts)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup peas (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown them on both sides.
  3. Remove the chicken and set it aside.
  4. Toss the diced onion and minced garlic into the pot and sauté until soft.
  5. Add the rice and stir for 2 minutes.
  6. Pour in the chicken broth, paprika, salt, and pepper.
  7. Return the chicken to the pot and bring it to a boil.
  8. Cover and reduce the heat; let it simmer for 20 minutes.
  9. Add the peas and cook for an additional 5 minutes.
