A one-pan BBQ chicken and rice skillet that’s sweet, smoky, and satisfying. Made with pantry staples and ready in under 30 minutes, it’s perfect for a quick and hearty family dinner.

- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 1 ½ cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 green onions, sliced (optional for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season cubed chicken with salt and pepper. Sauté until browned (about 5–7 minutes), then remove from the pan.
- In the same pan, toast the rice for 2 minutes.
- Add chicken broth, BBQ sauce, honey, garlic powder, and onion powder. Stir to combine.
- Return the chicken to the pan and nestle it into the rice mixture.
- Bring to a simmer, then cover and reduce heat to low.
- Cook for 18–20 minutes, or until rice is tender and liquid is absorbed.
- Let sit for 5 minutes covered, then fluff rice with a fork.
- Garnish with sliced green onions and serve warm.
Notes
Use your favorite BBQ sauce for a personalized flavor. For extra heat, add chili flakes or a dash of hot sauce. Leftovers make great next-day lunches.
