Description

A one-pan BBQ chicken and rice skillet that’s sweet, smoky, and satisfying. Made with pantry staples and ready in under 30 minutes, it’s perfect for a quick and hearty family dinner.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 ½ cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 green onions, sliced (optional for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season cubed chicken with salt and pepper. Sauté until browned (about 5–7 minutes), then remove from the pan.
  3. In the same pan, toast the rice for 2 minutes.
  4. Add chicken broth, BBQ sauce, honey, garlic powder, and onion powder. Stir to combine.
  5. Return the chicken to the pan and nestle it into the rice mixture.
  6. Bring to a simmer, then cover and reduce heat to low.
  7. Cook for 18–20 minutes, or until rice is tender and liquid is absorbed.
  8. Let sit for 5 minutes covered, then fluff rice with a fork.
  9. Garnish with sliced green onions and serve warm.

Notes

Use your favorite BBQ sauce for a personalized flavor. For extra heat, add chili flakes or a dash of hot sauce. Leftovers make great next-day lunches.
