  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat until fragrant.
  2. Add the cherry tomatoes, bell pepper, and zucchini. Cook for 5-7 minutes until softened.
  3. Add garlic and Italian seasoning, stirring for about a minute.
  4. Add the gnocchi and 1 cup of water, stirring to combine.
  5. Cover and cook for 5-8 minutes until the gnocchi is tender.
  6. Season with salt and pepper, stirring to combine.
  7. Garnish with fresh basil before serving.
