Ingredients
- 1 package gnocchi (16 oz)
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 zucchini, sliced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat until fragrant.
- Add the cherry tomatoes, bell pepper, and zucchini. Cook for 5-7 minutes until softened.
- Add garlic and Italian seasoning, stirring for about a minute.
- Add the gnocchi and 1 cup of water, stirring to combine.
- Cover and cook for 5-8 minutes until the gnocchi is tender.
- Season with salt and pepper, stirring to combine.
- Garnish with fresh basil before serving.
Notes
