Ingredients
- 2 tablespoons olive oil
- 1 cup diced onions
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves minced garlic
- 4 cups chicken broth
- 1 package gnocchi (about 16 ounces)
- 2 cups shredded chicken
- 1 cup heavy cream
- 2 cups chopped spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until tender.
- Add minced garlic and cook for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Add gnocchi and cook according to package instructions.
- Stir in shredded chicken and heavy cream until heated through.
- Add chopped spinach and cook until just wilted.
