Description
This warm and gooey peach cobbler features a buttery brown sugar crust and juicy peaches, topped optionally with rich maple butter. Perfect served with vanilla ice cream!
Ingredients
- 1 stick (8 tablespoons) salted butter
- 1 cup all-purpose flour
- 1 cup light or dark brown sugar, divided
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon kosher salt
- 1 cup milk
- 1 tablespoon vanilla extract
- 5–6 ripe peaches, sliced
- 2 tablespoons maple syrup (optional)
Optional Maple Butter Topping:
- 4 tablespoons butter
- 2 tablespoons maple syrup
- Pinch of sea salt
Instructions
- Preheat oven to 375°F (190°C).
- Melt the butter: Place the stick of butter in a 9×13-inch baking dish and put it in the oven to melt.
- Make the batter: In a bowl, whisk together flour, ¾ cup brown sugar, baking powder, cinnamon, and salt. Stir in the milk and vanilla extract until smooth.
- Prepare the peaches: In another bowl, toss sliced peaches with the remaining ¼ cup brown sugar and maple syrup (if using).
- Assemble the cobbler: Pour the batter over the melted butter in the dish — do not stir. Layer half the peaches over the batter, then top with the rest.
- Bake for 50–55 minutes until the top is golden brown and the edges are bubbling.
- Optional Maple Butter: In a small pan, melt 4 tbsp butter with 2 tbsp maple syrup. Bring to a boil for 2 minutes, then remove from heat.
- Serve warm with vanilla ice cream and a drizzle of maple butter, if desired.
Notes
For deeper flavor, use dark brown sugar. Frozen or canned peaches can also be used (drain well first).
