A classic recipe for banana bread that’s simple and delicious, perfect for using overripe bananas.
Ingredients
- 3 Medium-size bananas, extra ripe (mashed, about 1 1/4 to 1 1/2 cups)
- 1 cup White granulated sugar
- 1/3 cup Canola oil
- 2 Large eggs (room temperature)
- 1 tsp Vanilla extract
- 1 1/3 cups All purpose flour (sifted)
- 1 tsp Baking soda
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350°F (175°C). Spray a 9×5 loaf pan with nonstick spray and line the bottom and two sides with parchment paper.
- In a large bowl, add the bananas and mash them until smooth with a fork.
- Add the sugar to the mashed bananas and mix well.
- Stir in the eggs, vanilla extract, and canola oil until evenly combined.
- Sift the flour, baking soda, and salt into the bowl with the banana mixture. Stir just until combined; do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the banana bread cool completely before removing it from the pan.
Notes
Use very ripe bananas for the best flavor and sweetness. You can add nuts or chocolate chips for extra flavor.
