Description
Delicious Nutella stuffed cookies that combine rich chocolate flavor with a soft, chewy texture.
Ingredients
- 1 jar of Nutella
- 120g unsalted butter, cold
- 100g brown sugar
- 100g granulated sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1 egg yolk
- 280g plain flour
- 2 tablespoons corn flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 200g chocolate, chopped
Instructions
- Place 6 small dollops of Nutella on a baking paper lined tray and freeze them.
- In a large bowl, beat together the cold butter, brown sugar, granulated sugar, and vanilla for about 5 minutes.
- Mix in the egg and egg yolk.
- In a separate bowl, combine plain flour, corn flour, baking powder, and salt; then add to the butter mixture along with chopped chocolate. Mix until no flour is visible.
- Divide the dough into 140g pieces, yielding about 6 or 7 pieces.
- Flatten each piece of dough, place a frozen Nutella dollop in the center, and roll into a ball.
- Place the cookie balls on a tray and freeze for an hour.
- Preheat your oven to 220°C/425°F about 10 minutes before baking.
- Arrange cookie dough balls on a baking paper lined tray, leaving space between them.
- Bake for 20-22 minutes, then cool on the tray for 15 minutes.
- Serve warm and enjoy!
Notes
For best results, use cold butter and ensure the Nutella is fully frozen before use.
