No-Bake Blueberry Chia Seed Pie

Description

A simple and healthy no-bake blueberry chia seed pie that’s loaded with antioxidants and incredibly easy to make.


Ingredients

  • 2 cups fresh blueberries (or frozen)
  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 teaspoon salt


Instructions

  1. In a mixing bowl, combine the almond flour, melted coconut oil, and salt to form the crust. Press the mixture into the bottom of a pie dish and refrigerate.
  2. In another bowl, blend the blueberries, chia seeds, honey (or maple syrup), and vanilla extract. Mashing the blueberries works too.
  3. Allow the mixture to sit for about 15 minutes to thicken.
  4. Pour the blueberry mixture into the chilled crust and spread it evenly.
  5. Refrigerate for at least 2 hours to set.
  6. Serve chilled and enjoy.

Notes

Ensure to refrigerate adequately for the best texture. You can substitute ingredients based on preference.
