Description
A simple and healthy no-bake blueberry chia seed pie that’s loaded with antioxidants and incredibly easy to make.
Ingredients
- 2 cups fresh blueberries (or frozen)
- 1/4 cup chia seeds
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/4 cup melted coconut oil
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, combine the almond flour, melted coconut oil, and salt to form the crust. Press the mixture into the bottom of a pie dish and refrigerate.
- In another bowl, blend the blueberries, chia seeds, honey (or maple syrup), and vanilla extract. Mashing the blueberries works too.
- Allow the mixture to sit for about 15 minutes to thicken.
- Pour the blueberry mixture into the chilled crust and spread it evenly.
- Refrigerate for at least 2 hours to set.
- Serve chilled and enjoy.
Notes
Ensure to refrigerate adequately for the best texture. You can substitute ingredients based on preference.
