Description

Ingredients

  • Chicken thighs
  • Tomatoes
  • Bell peppers
  • Onion
  • Garlic
  • Ginger
  • Scotch bonnet pepper (optional)
  • Seasoning cubes
  • Salt
  • Vegetable oil
  • Water


Instructions

  1. Season the chicken thighs with salt and seasoning cubes, rubbing it in thoroughly.
  2. In a large pot, heat vegetable oil over medium heat.
  3. Add chopped onions and sauté until translucent.
  4. Add minced garlic and ginger, sauté for another minute.
  5. Blend or chop tomatoes and bell peppers, then add them to the pot.
  6. Cook the sauce until it thickens, about 15-20 minutes.
  7. Add the seasoned chicken to the pot and stir to combine.
  8. Pour in enough water to cover the chicken and bring to a boil.
  9. Reduce heat and simmer until the chicken is cooked through, about 30-40 minutes.
  10. Adjust seasoning and add Scotch bonnet pepper if desired.
  11. Serve hot with rice or any preferred dish.

Notes

For a milder taste, skip the Scotch bonnet pepper. This stew can be frozen for later enjoyment.
