Ingredients
- 1 kg chicken, cut into pieces
- 4 large tomatoes, blended
- 1 large onion, chopped
- 3 tablespoons vegetable oil
- 2 teaspoons ground pepper
- 1 teaspoon thyme
- Salt to taste
- 1 cup chicken stock
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, stirring frequently until translucent and fragrant.
- Add the blended tomatoes and cook for about ten minutes, stirring occasionally.
- Add the chicken pieces, ensuring they are well-coated in the tomato mixture. Brown the chicken on all sides.
- Mix in the ground pepper, thyme, and salt to taste.
- Pour in the chicken stock and let the chicken simmer for about 30 minutes, covered.
- Serve with rice or bread.
