Ingredients

  • 1 kg chicken, cut into pieces
  • 4 large tomatoes, blended
  • 1 large onion, chopped
  • 3 tablespoons vegetable oil
  • 2 teaspoons ground pepper
  • 1 teaspoon thyme
  • Salt to taste
  • 1 cup chicken stock

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, stirring frequently until translucent and fragrant.
  2. Add the blended tomatoes and cook for about ten minutes, stirring occasionally.
  3. Add the chicken pieces, ensuring they are well-coated in the tomato mixture. Brown the chicken on all sides.
  4. Mix in the ground pepper, thyme, and salt to taste.
  5. Pour in the chicken stock and let the chicken simmer for about 30 minutes, covered.
  6. Serve with rice or bread.

Notes

For deeper flavor, marinate chicken pieces with spices and a little salt for a few hours or overnight before cooking. Store leftovers in the refrigerator for up to 3-4 days or freeze for up to 2 months.
