Description
A simple and delicious mushroom wild rice pilaf packed with flavor, perfect for busy weeknights or entertaining guests.
Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Rinse the wild rice under cold water.
- In a saucepan, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add mushrooms and cook until tender.
- Add wild rice and broth; bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes.
- Fluff with a fork and season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
Make sure to rinse the wild rice before cooking to avoid a gritty texture. This pilaf can also be made in advance and tastes even better the next day.
