Description

A quick and easy Mushroom and Tofu Stir-Fry that’s healthy and customizable, perfect for busy days or a cozy night in.


Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups of sliced mushrooms
  • 2 tablespoons of soy sauce
  • 1 tablespoon of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Optional vegetables (bell peppers, broccoli, etc.)


Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat vegetable oil in a pan over medium-high heat.
  3. Add tofu and cook until golden brown and crisp.
  4. Remove tofu from the pan and set aside.
  5. In the same pan, add mushrooms and cook until browned and tender.
  6. Add garlic and ginger, sautéing until fragrant.
  7. Return tofu to the pan, add soy sauce, and mix well.
  8. If using, add optional vegetables and cook until tender.
  9. Season with salt and pepper to taste and serve hot.

Notes

Serve the stir-fry over rice or noodles for a complete meal. Customize with your favorite veggies or spices.
