Description
A quick and easy Mushroom and Tofu Stir-Fry that’s healthy and customizable, perfect for busy days or a cozy night in.
Ingredients
- 1 block of firm tofu, cubed
- 2 cups of sliced mushrooms
- 2 tablespoons of soy sauce
- 1 tablespoon of garlic, minced
- 1 tablespoon of ginger, minced
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Optional vegetables (bell peppers, broccoli, etc.)
Instructions
- Press the tofu to remove excess moisture, then cut it into cubes.
- Heat vegetable oil in a pan over medium-high heat.
- Add tofu and cook until golden brown and crisp.
- Remove tofu from the pan and set aside.
- In the same pan, add mushrooms and cook until browned and tender.
- Add garlic and ginger, sautéing until fragrant.
- Return tofu to the pan, add soy sauce, and mix well.
- If using, add optional vegetables and cook until tender.
- Season with salt and pepper to taste and serve hot.
Notes
Serve the stir-fry over rice or noodles for a complete meal. Customize with your favorite veggies or spices.
