Ingredients
- 4 chicken breasts
- 1 cup mushrooms, chopped
- 1/2 cup cream cheese
- 1/4 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs (like thyme or parsley)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add mushrooms and garlic; sauté until mushrooms are tender.
- In a bowl, combine sautéed mushrooms, cream cheese, mozzarella, herbs, salt, and pepper.
- Slice pockets into the chicken breasts and stuff each one with the mushroom mixture.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
Make sure not to overcook the chicken. Check the internal temperature to ensure it reaches 165°F (75°C). Feel free to add other fillings like spinach or sun-dried tomatoes for extra flavor.
