Ingredients
- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat the olive oil in a pot over medium heat.
- Add the chopped onion and minced garlic; sauté until soft and fragrant.
- Toss in the sliced mushrooms and cook until they are browned.
- Add the rice and stir to coat it evenly.
- Pour in the vegetable broth and add salt and pepper; bring to a boil.
- Once boiling, reduce heat and cover; let cook for about 15 to 20 minutes until rice is tender.
- Fluff with a fork and serve.
Notes
