Description

Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until soft and fragrant.
  3. Toss in the sliced mushrooms and cook until they are browned.
  4. Add the rice and stir to coat it evenly.
  5. Pour in the vegetable broth and add salt and pepper; bring to a boil.
  6. Once boiling, reduce heat and cover; let cook for about 15 to 20 minutes until rice is tender.
  7. Fluff with a fork and serve.

Notes

Feel free to substitute rice with quinoa or barley, and mix in any leftover vegetables you have.
