A creative and portable way to enjoy leftover turkey and stuffing from holiday meals.
Ingredients
- 2 cups leftover turkey, shredded
- 1 box stuffing mix
- 2 large eggs
- 1 cup chicken broth
- 1/2 cup gravy
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp butter, for greasing
- Chopped parsley (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with butter.
- In a bowl, mix the stuffing mix with chicken broth and let it soak for a few minutes.
- Add shredded turkey, eggs, salt, and pepper to the stuffing mixture and stir to combine.
- Spoon the mixture into each muffin cup, pressing down slightly.
- Bake for 20-25 minutes or until golden brown.
- Serve warm with gravy drizzled on top.
Notes
These cups are best served warm. You can store leftovers in an airtight container for 3-4 days or freeze them for up to 3 months.
