Description

A creative and portable way to enjoy leftover turkey and stuffing from holiday meals.


Ingredients

  • 2 cups leftover turkey, shredded
  • 1 box stuffing mix
  • 2 large eggs
  • 1 cup chicken broth
  • 1/2 cup gravy
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter, for greasing
  • Chopped parsley (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with butter.
  2. In a bowl, mix the stuffing mix with chicken broth and let it soak for a few minutes.
  3. Add shredded turkey, eggs, salt, and pepper to the stuffing mixture and stir to combine.
  4. Spoon the mixture into each muffin cup, pressing down slightly.
  5. Bake for 20-25 minutes or until golden brown.
  6. Serve warm with gravy drizzled on top.

Notes

These cups are best served warm. You can store leftovers in an airtight container for 3-4 days or freeze them for up to 3 months.
