This easy crockpot recipe features tender chicken thighs in a rich soy-based sauce, perfect for busy weeknights.


Ingredients

  • 2 pounds of chicken thighs
  • 1 cup of soy sauce
  • 1/2 cup of honey
  • 1/4 cup of rice vinegar
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 1 tablespoon of sesame oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups of broccoli florets
  • 2 tablespoons of cornstarch
  • 2 tablespoons of water


Instructions

  1. Place the chicken thighs evenly in the crockpot.
  2. In a bowl, combine soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
  3. Pour the marinade over the chicken, ensuring it’s well-coated.
  4. Add sliced bell pepper and onion to the crockpot.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. 30 minutes before serving, add broccoli florets.
  7. To thicken the sauce, mix cornstarch and water; stir into the crockpot for 15-20 minutes.
  8. Serve hot over rice, optionally garnished with sesame seeds or green onions.
