This easy crockpot recipe features tender chicken thighs in a rich soy-based sauce, perfect for busy weeknights.
Ingredients
- 2 pounds of chicken thighs
- 1 cup of soy sauce
- 1/2 cup of honey
- 1/4 cup of rice vinegar
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 tablespoon of sesame oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cups of broccoli florets
- 2 tablespoons of cornstarch
- 2 tablespoons of water
Instructions
- Place the chicken thighs evenly in the crockpot.
- In a bowl, combine soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
- Pour the marinade over the chicken, ensuring it’s well-coated.
- Add sliced bell pepper and onion to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, add broccoli florets.
- To thicken the sauce, mix cornstarch and water; stir into the crockpot for 15-20 minutes.
- Serve hot over rice, optionally garnished with sesame seeds or green onions.
