Description

A simple and delicious braised beef roast recipe that’s perfect for a hearty meal.


Ingredients

  • 3-4 pounds beef roast (chuck or brisket)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 4 carrots, chopped
  • 3-4 potatoes, cubed
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2-3 sprigs fresh thyme
  • 2-3 bay leaves
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Sear the roast on all sides until browned, about 5-7 minutes.
  5. Remove the roast and set it aside.
  6. Add chopped onions and garlic to the pot, and sauté until softened.
  7. Add carrots and potatoes, cooking for a few more minutes.
  8. Pour in the beef broth and red wine (if using), scraping the bottom of the pot.
  9. Place the roast back in the pot with thyme, bay leaves, and any additional seasoning.
  10. Cover and transfer to the oven.
  11. Braise for 3-4 hours, or until the meat is fork-tender.
  12. Remove from the oven, let it rest before slicing. Serve warm with veggies and pan juices.

Notes

For best flavor, allow the roast to rest before slicing. This dish can be made a day ahead and tastes even better the next day.
