Description

A cozy Moroccan Potato Stew that combines exotic spices with hearty vegetables for a comforting meal that’s easy to prepare.


Ingredients

  • 2 large potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 can chickpeas, drained
  • 2 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a large tagine or pot over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in the spices: cumin, coriander, paprika, and cinnamon, cooking for an additional minute.
  3. Add the diced potatoes, carrots, bell pepper, and zucchini. Stir to coat the vegetables with the spices.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Cover and cook for 25-30 minutes, or until the vegetables are tender.
  5. Add the chickpeas and cook for another 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

For a thicker stew, mash a few potatoes against the side of the pot. Can be made in a slow cooker as well.
