Description

Delicious and adorable mini turkey meatloaf muffins, perfect for meal prep and easy family dinners.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, egg, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Grease a muffin tin.
  4. Fill each muffin cup with the turkey mixture.
  5. Spoon ketchup on top of each muffin.
  6. Bake for 25-30 minutes or until cooked through.
  7. Let cool for a few minutes before serving.

Feel free to get creative with the ingredients by swapping out turkey for another meat or adding vegetables.
