Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/4 cup cold water
  • 1 cup fresh strawberries, chopped
  • 2 tablespoons sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)


Instructions

  1. In a bowl, mix the flour, melted coconut oil, maple syrup, and cold water until a dough forms.
  2. Roll out the dough on a floured surface and cut it into rectangles, about 4 inches by 2 inches.
  3. In another bowl, combine chopped strawberries, sugar, cornstarch, and vanilla extract. Mix well.
  4. Place a spoonful of the strawberry mixture in the center of each rectangle.
  5. Fold over the dough to make a pocket and seal the edges.
  6. Bake at 350°F (175°C) for about 15-20 minutes until golden.
  7. Allow to cool, dust with powdered sugar if desired, and serve.

Notes

For best results, use fresh strawberries and avoid overripe ones. You can substitute with other fruits like blueberries or raspberries if desired.
