Description

Delicious and crispy bites of mashed potato and cheddar cheese, perfect for snacks or appetizers.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a large mixing bowl, combine mashed potatoes, cheddar cheese, breadcrumbs, green onions, egg, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into small cakes, about the size of a golf ball, and flatten them slightly.
  3. Heat oil in a large frying pan over medium heat. Test the oil by dropping a small piece of the mixture into the pan; it should sizzle.
  4. Carefully place the cakes into the hot oil, frying for 3-4 minutes per side or until golden brown and crispy.
  5. Remove the cakes and drain on paper towels before serving warm.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months. Reheat in the oven or skillet before serving.
