Description

These healthy mini meatloaf muffins are protein-packed, portion-controlled, and perfect for meal prep. Made with ground meat, simple seasonings, and optionally topped with a sweet-savory glaze.


Ingredients

  • ½ cup breadcrumbs (or almond/oat flour)

  • 1 clove minced garlic
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • Salt and pepper to taste
  • Optional: Shredded cheese, chopped vegetables, fresh herbs
  • Glaze (optional): 2 tbsp ketchup + 1 tsp brown sugar

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Mix Ingredients: In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, mustard, salt, pepper, and any optional add-ins. Mix until just combined.
  3. Prep the Pan: Lightly grease a muffin tin or line with silicone liners.
  4. Form Muffins: Divide the meat mixture evenly into 10–12 muffin cups.
  5. Add Glaze: Top each muffin with the optional glaze (ketchup + brown sugar).
  6. Bake: Bake for 20–25 minutes or until internal temperature reaches 160°F (71°C).
  7. Rest and Serve: Let rest for 5 minutes before serving. Great with mashed potatoes, rice, or steamed veggies.

Notes

These freeze well. Cool completely, wrap individually, and store in a freezer-safe container. Reheat in oven or microwave as needed. Use oat flour or almond flour for a gluten-free version.
