These healthy mini meatloaf muffins are protein-packed, portion-controlled, and perfect for meal prep. Made with ground meat, simple seasonings, and optionally topped with a sweet-savory glaze.

- ½ cup breadcrumbs (or almond/oat flour)
- 1 egg
- ¼ cup chopped onion
- 1 clove minced garlic
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp mustard
- Salt and pepper to taste
- Optional: Shredded cheese, chopped vegetables, fresh herbs
- Glaze (optional): 2 tbsp ketchup + 1 tsp brown sugar
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Mix Ingredients: In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, mustard, salt, pepper, and any optional add-ins. Mix until just combined.
- Prep the Pan: Lightly grease a muffin tin or line with silicone liners.
- Form Muffins: Divide the meat mixture evenly into 10–12 muffin cups.
- Add Glaze: Top each muffin with the optional glaze (ketchup + brown sugar).
- Bake: Bake for 20–25 minutes or until internal temperature reaches 160°F (71°C).
- Rest and Serve: Let rest for 5 minutes before serving. Great with mashed potatoes, rice, or steamed veggies.
Notes
These freeze well. Cool completely, wrap individually, and store in a freezer-safe container. Reheat in oven or microwave as needed. Use oat flour or almond flour for a gluten-free version.
