This comforting chicken casserole combines shredded rotisserie chicken, creamy cheeses, and a buttery Ritz cracker topping for a warm and satisfying family dinner.

- 3 cups shredded cooked chicken (rotisserie or chicken breast)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- ½ cup mayonnaise (optional)
- 4 oz cream cheese, softened
- ¾ cup cottage cheese
- 1–2 cups shredded cheddar cheese
- Salt, pepper, and garlic powder to taste
- 1 sleeve Ritz crackers, crushed
- ½ stick (4 tbsp) butter, melted
Instructions
- Preheat oven: Preheat to 350°F (175°C).
- Make the filling: In a large bowl, combine cream cheese, cottage cheese, sour cream, mayonnaise (if using), cream of chicken soup, and seasonings. Stir until smooth.
- Add chicken & cheese: Fold in the shredded chicken and half of the shredded cheddar cheese.
- Assemble: Spread the mixture evenly into a greased 9×13-inch baking dish. Top with the remaining shredded cheese.
- Prepare topping: Mix the crushed Ritz crackers with the melted butter and sprinkle evenly over the casserole.
- Bake: Bake uncovered for 30–35 minutes or until bubbly and golden brown on top.
Notes
For extra richness, use full-fat sour cream and cream cheese. You can also stir in frozen vegetables or cooked rice for added volume. Let rest 5 minutes before serving.
