Ingredients
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 tablespoon olive oil (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the cooked rice, black beans, corn, salsa, cumin, chili powder, and salt.
- Spread the mixture evenly in a greased baking dish.
- Top with the shredded cheese.
- Drizzle a little olive oil over the cheese (optional).
- Bake for 25-30 minutes until heated through and the cheese is melted.
