Ingredients
- 1 lb ground beef
- 2 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the onions, bell peppers, and garlic; sauté until soft.
- Stir in the diced potatoes, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for about 20-25 minutes, or until the potatoes are tender.
- If using, sprinkle cheese over the top and let melt.
- Garnish with fresh cilantro before serving.
Notes
For a healthier version, substitute ground turkey or chicken for beef. You can also add eggs for a breakfast skillet variation.
