Ingredients

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the onions, bell peppers, and garlic; sauté until soft.
  3. Stir in the diced potatoes, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat, cover, and simmer for about 20-25 minutes, or until the potatoes are tender.
  5. If using, sprinkle cheese over the top and let melt.
  6. Garnish with fresh cilantro before serving.

Notes

For a healthier version, substitute ground turkey or chicken for beef. You can also add eggs for a breakfast skillet variation.
