Description

A delicious twist on the classic meatloaf, made with ground chicken, garlic, and Parmesan for a lighter yet flavorful dish.


Ingredients

  • 1 lb lean ground chicken
  • 2 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, minced garlic, parmesan cheese, breadcrumbs, milk, egg, salt, pepper, and Italian seasoning.
  3. Mix until just combined; do not overmix.
  4. Shape the mixture into a loaf and place it in a greased loaf pan.
  5. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Allow to rest for a few minutes before slicing. Serve with roasted vegetables or mashed potatoes.

Notes

For a crispy top, broil the meatloaf for the last few minutes of baking. You can add diced onions or bell peppers for extra moisture.
