🍗 Chicken:
- 4 boneless, skinless chicken breasts (6–8 oz each)
- Salt and pepper, to taste
- ½ tsp garlic powder (or minced garlic)
- Optional: ½ tsp smoked paprika
🥄 Creamy Topping:
- 1 cup mayonnaise or Greek yogurt
- ½ cup freshly grated Parmesan cheese
- 1 tsp onion powder
- 1 tsp Dijon mustard (optional)
- 1 tbsp chopped fresh parsley (or 1 tsp dried)
- Juice of ½ lemon
🌿 Garnish:
- Fresh herbs (parsley, thyme, chives)
- Lemon zest or lemon wedges
Instructions
- Preheat Oven: Preheat to 375°F (190°C). Line or grease a baking dish.
- Prep Chicken: Pat chicken breasts dry. Season with salt, pepper, garlic powder, and paprika if using. Pound to even thickness if needed.
- Make Topping: In a bowl, combine mayonnaise (or yogurt), Parmesan, onion powder, Dijon, lemon juice, and parsley. Mix until smooth.
- Coat Chicken: Spread the creamy mixture generously over the top of each chicken breast.
- Bake: Bake uncovered for 30–35 minutes, or until chicken reaches 165°F internal temperature. Optional: broil for 2–3 minutes for a golden top.
- Rest & Serve: Let rest 5 minutes before serving. Garnish with fresh herbs and lemon zest or wedges.
Notes
You can substitute sour cream for mayo or yogurt if preferred. Use freshly grated Parmesan for best results. Great served with roasted veggies or a green salad.
