Description

A comforting Mediterranean vegetable lasagna that layers roasted vegetables, gooey cheese, and flavorful tomato sauce, making healthy eating delicious and fun.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 1 jar marinara sauce
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until fragrant.
  4. Add zucchini, bell pepper, and mushrooms; cook until softened. Stir in spinach until wilted.
  5. Mix in oregano, basil, salt, and pepper. Remove from heat.
  6. In a baking dish, spread a layer of marinara sauce followed by three lasagna noodles, half of the vegetable mixture, and a layer of ricotta and mozzarella.
  7. Repeat the layers, ending with noodles topped with remaining marinara sauce and mozzarella.
  8. Sprinkle Parmesan cheese on top.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  11. Let cool for a few minutes before serving.

Notes

Let the lasagna rest before slicing for cleaner cuts and fewer molten cheese emergencies.
