Description

Delightful mini peppers stuffed with a creamy feta and olive mixture, perfect for appetizers or a light snack.


Ingredients

  • 12 mini bell peppers
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup olives, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the mini peppers in half lengthwise and remove the seeds.
  3. In a bowl, mix feta cheese, cream cheese, olives, sun-dried tomatoes, parsley, garlic powder, and black pepper.
  4. Stuff each pepper half with the cheese mixture.
  5. Place the stuffed peppers on a baking sheet.
  6. Bake for 20 minutes or until peppers are tender.
  7. Remove from the oven and let cool slightly before serving.
