Delightful mini peppers stuffed with a creamy feta and olive mixture, perfect for appetizers or a light snack.
Ingredients
- 12 mini bell peppers
- 1 cup feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 1/4 cup olives, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the mini peppers in half lengthwise and remove the seeds.
- In a bowl, mix feta cheese, cream cheese, olives, sun-dried tomatoes, parsley, garlic powder, and black pepper.
- Stuff each pepper half with the cheese mixture.
- Place the stuffed peppers on a baking sheet.
- Bake for 20 minutes or until peppers are tender.
- Remove from the oven and let cool slightly before serving.
