Ingredients
- 3 sheets phyllo dough
- 2 tablespoons olive oil
- 1 cup feta cheese, crumbled
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup olives, sliced
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Thaw the phyllo dough according to package instructions.
- Brush a muffin tin with olive oil.
- Layer three sheets of phyllo dough, brushing each layer with olive oil.
- Cut dough into squares and place in muffin tin, pressing gently.
- Mix feta, spinach, sun-dried tomatoes, olives, oregano, salt, and pepper in a bowl.
- Fill each phyllo cup with the mixture.
- Bake for 15-20 minutes, until golden brown and crispy.
- Cool slightly before serving.
