Ingredients
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a pot over medium heat.
- Add onion and garlic. Sauté until the onion is soft and fragrant.
- Toss in the bell pepper and cook for another 5 minutes.
- Stir in chickpeas, diced tomatoes, vegetable broth, cumin, and paprika.
- Bring to a boil, reduce heat, and let simmer for 20 minutes.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
