Ingredients

  • 2 Chicken breasts
  • 1 cup Sun-ripened tomatoes
  • 1/2 cup Olives
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 2 tbsp Olive oil
  • Fresh herbs (such as basil and parsley), to taste
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and garlic; sauté until translucent.
  3. Add chicken breasts and cook until browned on both sides.
  4. Add sun-ripened tomatoes and olives; season with salt and pepper.
  5. Stir in fresh herbs and cook for an additional 10-15 minutes until chicken is cooked through and the flavors meld.
  6. Serve warm.

Notes

Make sure not to overcrowd the skillet for even cooking. You can also add artichokes or feta cheese for more flavor.
