Ingredients
- 2 Chicken breasts
- 1 cup Sun-ripened tomatoes
- 1/2 cup Olives
- 2 cloves Garlic, minced
- 1 Onion, chopped
- 2 tbsp Olive oil
- Fresh herbs (such as basil and parsley), to taste
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and garlic; sauté until translucent.
- Add chicken breasts and cook until browned on both sides.
- Add sun-ripened tomatoes and olives; season with salt and pepper.
- Stir in fresh herbs and cook for an additional 10-15 minutes until chicken is cooked through and the flavors meld.
- Serve warm.
Notes
Make sure not to overcrowd the skillet for even cooking. You can also add artichokes or feta cheese for more flavor.
